Chilled Cucumber and Avocado Soup

IngredientsChilled Cucumber and Avocado Soup

  • 11/2 cups kefir (plain whole milk, or yogurt, not Greek-style)
  • 1/2 cup sour cream (or creme fraiche)
  • 2 cucumbers (large, about 1 1/2 pounds, peeled, seeded, and chopped)
  • 1/2 avocado (medium, chopped)
  • 21/2 green onions (chopped)
  • 1 Serrano chile (chopped)
  • 2 tbsp chopped cilantro
  • 1/4 tsp ground cumin
  • 1/4 tsp dried oregano leaves, crushed
  • 1 lime
  • salt (to taste)

Garnish:

  • avocado (chopped)
  • chopped tomatoes
  • chopped cilantro
  • cheese (crumbled Cotija, can substitute feta)

Instructions

  1. Making this soup can only take minutes. Place in a blender all the ingredients and blend until fully smooth. You can refrigerate first or serve immediately. When serving this soup, garnished it with avocado, chopped tomato, cilantro, and crumbled Cotija cheese.

Cottage Cheese

This cottage cheese is made only with two ingredients. These recipe is quick and easy to prepare. Just follow simple steps!

Instructions

  1. Start by heating the milk into 60°C [140°F].
  2. Then gently stir the milk and slowly pour the kefir into the milk as a slow steady stream. (Remember not to stir it too fast or too long or else the curds will break apart).
  3. As you continue stirring the curds will separate –  they should be clear and not milky. But if they are milky, increase the heat and add more kefir. Still slowly stirring it for a while until the whey becomes clear.
  4. Remove the curds using with a strainer. Then place them on either on cheesecloth lined colander or mesh-type strainer.
  5. Allow the curds to drain for about 15 minutes tops and you have a fresh cottage cheese.

Tip: Refrigerate the kefir before making the cottage cheese.

Nutmeg Donut

These delicious donuts with a hint of nutmeg is made more healthy because of Kefir. Try these recipe, it’s easy to make just follow some simple steps.

  • 3/4 cup kefir (low-fat buttermilk, (1%) or plain yogurt) – click here to buy
  • 2 cups all-purpose flour
  • 1/2 teaspoon freshly ground nutmeg
  • 1 1/2 teaspoons baking powder
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter or coconut oil
  • 2 large eggs
  • 1/4 cup honey or agave
  • 1/2 teaspoon vanilla extract

Berry Icing

  • 2 tablespoons of sugar
  • 1/2 teaspoon vanilla
  • 1 1/2 cups powdered sugar
  • 1/2 cup frozen mixed berries

Instructions

  1. First step is to preheat the oven to 425°. Then lightly grease a doughnut pan.
  2. Next is to combine the in a large bowl the sugar, flour,  baking powder, nutmeg and salt then stir to combine.
  3. Combine in another bowl the kefir, honey, eggs, butter, and vanilla then use a whisk to stir. After that, pour the liquid mixture to the flour mixture and whisk until combined.
  4. Using the piping bag, fill the doughnut pans with the batter. Or you can use a spoon to put the batter into the doughnut pans.
  5. Afterwards, bake in the center of the oven for about 9 minutes until the bottom is golden. Allow it to cool then top it with the berry icing.
  6. For berry icing, cook over medium heat the berries with sugar and a couple tablespoons of water until  berries are turned to sauce. Then strain into a bowl to remove the seeds and  1 1/2 cups of powdered sugar and 1/2 tsp vanilla extract. Mix well.

Buttermilk Biscuits

These scrumptious buttermilk biscuit recipe are so easy to make, if you follow a few simple instructions.

  • 3/4 cup buttermilk or milk Kefir – click here to buy
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 6 tablespoons butter (very cold)
  • 1 teaspoon salt

Instructions

  1. 12 to 24 hrs before to making biscuits, mix in a bowl the buttermilk and flour together. Cover and let the flour to soak. (But if you are using the sprouted flour then you can skip the soaking part).
  2. Preheating the oven to 450°F. Then start by cutting the butter into small chunks and add it to the flour/buttermilk mixture together with  baking powder, baking soda and salt. (Remember not to over mix it, but if the mixture is too dry then add some buttermilk).
  3. Next is place the the dough onto a lightly floured board. Then softly pat the dough to 1/2 inch thick. (This way the biscuits are lighter then using a rolling pin).
  4. Then cut the dough using a round cutter to cut out the biscuits. Place the cut out biscuits into a cookie sheet. Afterwards, bake the biscuits for about 10 to 12 minutes until golden brown.

Apple Muffins

Ingredients

  • 1-3/4 cups (425 mL) plain 1% yogurt or plain 2% yogurt or kefir milk – click here to buy
  • 1-3/4 cups (425 mL) quick-cooking rolled oats
  • 2 eggsapple muffins
  • 1 cup (250 mL) shredded peeled apple
  • 1 tsp (5 mL) vanilla
  • 1/4 cup (60 mL) vegetable oil
  • 2 cups (500 mL) whole wheat flour
  • 3/4 cup (175 mL) packed brown sugar
  • 2 tsp (10 mL) cinnamon
  • 1/2 tsp (2 mL) nutmeg
  • 4 tsp (18 mL) baking powder
  • 1 tsp (5 mL) baking soda
  • 3/4 cup (175 mL) raisins or dried cranberries
  • 1/2 tsp (2 mL) salt

Instructions

  1. The first thing to do is to combine in a bowl the oats and yogurt(kefir) and leave it for about 10 minutes. Then add in the apple, eggs, oil and vanilla .
  2. Combine in another bowl the sugar, flour, baking powder, cinnamon, baking soda, nutmeg and salt. Once they are combine pour the yogurt mixture over. Sprinkle it with raisins and stir.
  3. Next is to spoon the mixture into a paper lined muffin cups. Then bake it 375 degrees for 35 minutes or until the tops are golden brown. Allow the pan to cool before transferring the muffins.

This Kefir Buffalo Chicken Dip is excellent for people who are watching closely over their diet. Not because you are trying to lose weight, you will completely eliminate delicious foods and dips. You can as well enjoy your buffalo chicken by using a dip made with the nutritious kefir. Kefir Buffalo Chicken dip is low in sodium and is low in unhealthy fat. Here’s how you make your very own kefir buffalo chicken dip.

Kefir Buffalo Chicken Dip

Ingredients:

  • 2 oz blue cheese, crumbles
  • 6 oz low fat plain kefir – click here to buy
  • 2 oz buffalo wing sauce
  • 8 oz pack  neufchatel cheese, softened
  • 6 oz cooked chicken breasts, diced

Cooking Procedure:

  1. Whisk the neufchatel cheese until soft and creamy.
  2. Add a little kefir at a time and continue mixing until incorporated.
  3. Add the wing sauce to the mixture. Continue whisking the mixture until well blended.
  4. Gently fold in chicken and blue cheese.
  5. Pour the mixture to the baking dish and then heat it inside the oven for half an hour. Set the oven into 350 degrees.
  6. Check the dip before half an hour and see if it’s already hot and bubbly. If it’s still not bubbly, then let it stay for a while bubbles comes out and until the top is slightly brownish. However, you need to remember not to brown the top too much.
  7. Serve the dip in a platter together with a platter of colorful vegetable dippers.
