Traditionally, kefir is made with cow’s milk. However, today we can also see kefir that is made with goat’s milk. There are also some versions of kefir that are made with coconut milk and even with water. Water kefir, which is also popularly known as tibicos, is a bacterial culture that is grain based. It is basically made with water instead of the traditional milk. Water kefir makes up a refreshing and nutritious drink that is rich in probiotics and vitamins. Water kefir tastes like a can of soda, but without unhealthy sugar. You can enjoy your very own water kefir at home by simply following these steps:
- ¼ Cup sugar (depending on your taste)
- Kefir grains – click here to buy
- Figs or sultanas/raisins
- A thick slice of lemon
- 1 teaspoon black-strap molasses
- ¾ cup of hot water
- Approximately 1.5 L of tap water
- 2 Glass jars with 2L volume capacity
- Spoon for stirring
- Fine strainer
- Pour the tap water to the glass jar. The water level must be around ¾ of the jar.
- Meanwhile, slowly pour the sugar into the ¾ cup hot water while stirring continuously to dissolve sugar.
- Pour the water and sugar mixture to the jar
- Add the figs or sultanas/raisins, kefir grains and the lemon.
- Add the molasses to add texture and to enhance the taste.
- Stir the contents of the jar to properly mix all the ingredients.
- Cover the jar and let it set for a day at a room temperature.
- After a day, open the jar and stir it well.
- After stirring, have it covered again and have it set for another day.
- Filter the kefir using the fine strainer into the second jar.
- Keep the grains in the first jar and have it refrigerated for future use.
- Seal the kefir and place it inside the refrigerator for another 2 to 3 days to chill.
